My Gumbo recipe

Smokey Bob's gumbo recipe.

INGREDIENTS:
1/3 cup Vegetable shortening
1/3 cup Flour,all-purpose
1 12oz pkg of frozen season blend Onions
2 16oz pkgs of frozen gumbo mix
3 14oz cans of chicken broth
4 chicken breast cooked and cubed
16 ounces smoked sausage, sliced about 1/4" to 1/2" thick
2 14oz cans of Mexican or Chipotle diced Tomatoes
1 1/2 tbsp File
1 cup Uncooked rice
1 tbsp minced garlic
1 tbsp of Tony Chachere's creole seasoning
1 tbsp of Mrs. Dash chipotle seasoning
1 tbsp of Mrs. Dash herb & garlic seasoning


PREPARATION:

In large pot or 10" or 12" Dutch oven, melt shortening over low heat;
add flour and cook, stirring, until brown, about 10 minutes
(do not hurry; if flour burns, roux is ruined).

Add onions; cook until onion is translucent, about 5 minutes.

Slowly add broth; stir until broth reaches a boil.

Add rice, garlic, tomatoes, gumbo mix, seasonings, file, chicken and sausage.

Cover and simmer about 20 to 30 minutes.

Serve with cornbread.

On a second thought, better make that four blocks. :lol:

Bob, tell Judith, that we will give her a 6 block head start and make Jim wear a blindfold...of course, she will havvta carry the cow bell so Jim will know which way to go :D :lol: ;)

Bob & Judith, things are fine in Amarillo. Hope to see you guys soon. We had a Great Grand son in May so Ruby is busy babysetting and loving it. We will have a great grand daughter Dec 19 and another great grand son approx Jan 23. We will have to sneak away for the next gathering. I have almost finished #2.( A variation of the winter warror) thanks to Mike S and his great designsand willing ness to share them. And I am planning #3. Now to find some time to use them. We thought retirement would be dull but no way so far. Ed & Ruby
