The Crabby Paddy
Ingredients:
1 lb. fresh dungeness crab meat (cooked)
1 tbsp. dry minced onions
1 tbsp. coarse ground garlic powder
1 tbsp. coarse ground peppercorn medley
1 tsp. ground cloves
1 egg beaten
1/4 cup mayonnaise
1/4 cup seasoned bread crumbs
Directions:
Combine all ingredients and hand mix with fork until consistent in mixture.
Sprinkle additional bread crumbs onto a plate and set aside.
Form each paddy by hand by gathering a ball of mixture in palm of hand, using both hands to compress mixture together firmly while flattening formed paddy.
Place paddy onto the layer of bread crumbs on the plate and sprinkle additional bread crumbs over paddy until covered.
Fry in oil or butter over medium heat 3-4 minutes on each side, until golden brown.
