Gotta ask...is the jerky, um, tough? I have a friend who made jerky in the oven and it came out like shoe leather. Seems like the smoker would cure it without drying it as severely..

Either way, I'm trying this. I was going to make the oven jerky until I found out it comes out so dry you need a hatchet to break off pieces and a gallon of water to wash it down.

If anyone else tries this soon let me know how you like it...although I trust Mike's opinion!

That I had a smoker in the box for over a year??

I'm headed to Costco to get some turkey jerky tomorrow. When I can find a spot to store the smoker out of the rain, I might just build it early!

No...I'm not kicking my Vespa out of the garage for the smoker..no way, no how.

Friday nite, 10:15 p.m. And i'm thinking about a late night trip of many hours to rob a fridge of bar-b-que.

Don't you know those pics qualify as food porn and could get you thrown in jail? :lol:

It caused me to demolish my store of beef jerky. Can't wait for Costco to open...I need a fix....

Thanks Mike for the jerky recipe. :thumbsup:
I've always used a food dehydrator to make jerky so using a smoker will be a new adventure.

That is a lot of smoked meat. I got carried away. I gave some to my neighbors, their always helping us out. I put some in the freezer. Smoked meat doesn't last to long around here.
