Looks like a good reuse/adaptation to me.
One thing you might do for additional storage is to build
"infill" exterior [access] cabinets under the current side
overhangs, say, @ 8in base depth, then sloping up to meet
the base depth of the side overhangs. You could leave one
side 'open' as one big compartment for long items like awning
poles or odd shaped things. The other side could be divided
into 'fitted' size spaces/compartments/cabinets for specific
things - or - maybe you could make a fold-down. then lift up,
or a demountable galley unit or camp kitchen. Just don't
overload them and try to keep the weight balanced side to side
as well.
