What do you do with your knives?

I've been tossing them in with the other cooking utensils, but it's probably not safe for me or the knives. What do you folks do to keep them organized and sharp?

I've had one of these in everything I had that had a wall. Cheap and works great. I'll normally add thin felt at the grip points to make sure they don't jump out on their own if going down a bumpy road.

I picked up a couple of these hard, plastic blade covers and just toss them in a container with the rest of my cutlery. They work great and don't take up any extra space.

I like that, but I don't have a wall that it would work on.

Scan pan make a range of knives that come with covers that arnt to expensive but good quality

I'll make a sleeve by folding hard paper stock in half (like the weight of a manilla folder), then wrap the sleeve with masking tape. Works for hand saws, too. Works for years.

I also keep a fine edge on my knives using the bottom of a ceramic coffee cup. Put a drop of veg oil on the bottom of the upside-down cup, smear a little oil around the ceramic bead, and hone the knife on it. Some cups are better than others. Keep oiling, as this keeps the ceramic cutting and not clogging.

I only have four knives for camping. I took two thin pieces of leather and sewed lines and made a package for them I can roll the leather up and tie it with a leather lace and that makes them safe for everyone.

Now that I camp alone, I simply toss my butcher knife and paring knife, right into the same drawer that holds my 2 forks and 2 spoons. I don't see any reason to have a razor-sharp knife, in order to do the simple cooking I do out of my galley. However, my kitchen knives at home, are sharp enough to shave with, as I sharpen them often with my trusty multi-grit oil stone. Just a carpenter-thing I guess.

Camping generally means less....so we've got 2 paring knives that have a sheath that stays in our gally. Both are kept sharp. They are also dedicated to the camper, I don't want to move stuff back and forth continuously, when I decide it's time to go I want to hook up, throw a few things and and roll.

The sheath is the important part. A blade knocking around is going to get nicked and have the edge knocked off before you get to the first camp site..

You stand a greater chance of hurting yourself with a dull knife than a sharp one.

We also have a couple steak knives...these are less critical, since they are serrated....I'm not even sure their edges are keen.

More important is sharpening stones....they tend to be bulky. I just found the worksharp system. Their pocket guided field sharpener (http://www.worksharptools.com/knife/sha ... r-221.html) is the cats pajamas. A seriously cool tool!

The field sharpener has everything you need to obtain and maintain that keen edge....it brought a marginal pocket knife to what I consider a good if not very good edge in 2-3 minutes. Much better than the sharpeners that have a "v" of two carbide blades that just tear blades apart, and with a strop built in the edge stays usable for much longer.

one of my kids just got me a camping set of knifes its 2 in set they come with a protection cover and a nice box that they will start in when not in use

I have several inexpensive (< $10)
Santoku-style
knives that I picked up in the kitchen aisle at HEB (a giant chain grocery store in Texas). They come with a fitted plastic sheath, so can go right back into the utensil drawer after they are washed, dried and placed back in the sheath. My most used one has a 5-inch blade and it takes care of pretty much everything (I eat a lot of vegetables, so slice, slice, dice). I've taken it in for sharpening a few times to keep it functional in the kitchen.

Next time you go grocery shopping, check the knife section of the kitchen aisle of your grocery store and you'll probably see some. Target will have them as well.

Well, just looked at the reviews for the WorkSharp system. When I consider what it costs to take knives and scissors to the sharpening place, this would pay for itself in about two months. I take my knives to Knife Sharpest in Austin, TX, which has ambiance out the kazoo (mainly the funk of 30 or so years of stale cigarette smoke). Check out that Knife Sharpest link if you are into hand-made knives; there are some beautiful ones on their facebook page.

I'm kinda ready for knife sharpening in the cozy ambiance of my own smoke-free (unless I burn something!) kitchen, though, so WorkSharp may be just the thing.

We always take 12-18 knives and keep 'em sharp enough to shave the fuzz off a peach. And of course we bring our spinning wheel with us. No sense getting bored while we camp. Remember, a boring marriage is a dull marriage.



We usually do this before coffee in the morning. One really shouldn't do it while jitterd up with caffeine. Ain't safe. Ask my first wife. :?
