We just need to figure out a common gathering we'll both be at...
Joanie and I met George Thornton, the organizer of the ITG this past weekend during the 14th Dam... What a neat guy!!!
Joanie will just be finishing up with her teaching year right when the ITG is happening, so even flying there is out... :(
Got any plans on bringin' that Jim Dandy West anytime soon???

Thanks for the kudos Jack... It was my first prime rib in a DO and I learned a few things for better results next time.
Gonna try it again here real quick... At a local dutch oven society get together and hope to have it down pat come Mendo time. :twisted:
Hey... I should have the Maca 22 by then...
I could fit four 23 lbrs. in that monster!!! :twisted:

Dean, I have an Aunt that cooks large venison roasts in salt like you did...except she coats them in cayenne pepper before burying them in the salt....mmm mmm mmm almost make me shiver sitting here thinkin' about it :lol:

You guys could join Joanie and I HERE...
Or better yet...
Make plans on getting to Lee's Mendocino Coast Gathering towards the end of July. Yaa got plenty of time to make plans for that one.

I'll be doing PR at both of these events. :thumbsup:

Dean, my vacation days are already spoken for for 2007. I am planning on going to the IRG 2.0 next year. It will probably take me 2-3 days each way to go to California and back and that burns up alot of vacation time.

Hopefully, the Jim Dandy will belong to somebody else before the end of this summer so I can start on #3. I'll post my brisket technique pretty soon. I PM'd Ira on how I do it but don't know if he ever tried it or not.

I'd like to do that too, Jeff. I've been looking at the distance, about 1965 miles from Ft Worth. Guess we'll see what happens, long time still to plan.

I did burn up a lot of vacation time just traveling, it was 2200mi for us. If you can manage to get the time, you should do it at least once. One of the problems we had was trying to figure out what to see during the trip.

That roast was way too easy...
Barbara might be looking for something a little more involved. :thinking:

Joanie and I did a take off of Courtney's Cream Cheese Cobbler she does for the potluck on Saturday at the Dam Gathering...
It was an Apple Vanilla Cream Cheese Cobbler in a 12" DO and we made it Ala' Mode with Vanilla Ice Cream in another 12" DO.
That took ten times as much prep as the roast, but I've already shared that recipe here, so decided to enter the roast instead...
I'm really surprised that Matt, Joanne, Kevin, Rocky, Jim and others haven't submitted. (Maybe they're just stalling)
