Nice! I went the easy route and got a gas fired prebuilt little oven, an Ooni Koda. I know it’s not traditional but it sure is easy to make some good pizza with it. Our favorite is probably pesto, mozzarella and tomato.

I personally wouldn't buy a Pizza Oven insert for a Webber. Not saying they are no good, its just that I have a brick oven that only takes an hour and a half or so to get to Neapolitan temperatures. ~800 F.
I built it with thinner than normal bricks - the reduced thermal mass means it is not much good for retained heat slow cooking, but its brilliant for after work midweek pizza.

These days, probably due to spending too much time with South Africans, I'm much into cooking over ordinary every day wood fires.
The boys had a fire pit a bit like mine last weekend, but I noted it had fittings to support a spit. Gotta look into that.


800 deg F?! That is metal melting territory!

I'm not a pizza specialist. I work mostly with Barbecue and Tex-Mex so there is that... I can tell you how to properly smoke a brisket, or ribs. Or maybe make fresh from scratch beef, chicken, or pork fajitas...

Still working on barbacoa de cabeza, I haven't managed the coal pit technique, and unfortunately my father in law passed before he was able to share the tips and tricks...

Some of us wack things together and occasionally hit a home run. You mate are a Craftsman!

With temps below freezing I won't be getting to building for a while but might give it a go in the spring.

Met a bloke who has one of those. He absolutely swears by it. And, unlike my piles of bricks, they are portable. He's a pizza fanatic - any 23 year old who buys a $1000 oven (that's about what his Koda 16 costs here) so that he can cook authentic Margheritas while out camping is serious about the art form.

Certainly could melt lead and zinc at that temperature, but that's where you have to be if you want to cook a 90 second Neapolitan style pizza.
I tone it down a little bit these days. I sit closer to 700F than 800, because most people I know don't get the "less is more" aspect of Neapolitan pizza. They want more toppings, and at 800F the crust burns before the toppings are cooked.

I aspire to building a Uruguayan Parrilla, or an Argentine Asado one day.

Mine is the 12 I believe. It is easy to use with the gas...

Not sure how I missed your post. Sorry to hear about the pnuemonia. Been there, done that, did NOT like it...

If you are waiting for a child to marry well, you may end up waiting like Simeon...

Sourced up fasterners to complete the build. Finished building and installing a roller camera cradle for my camera slider build. On to adding the motor and stepper controller. Trying for variable speeds. I am finding a 1/8" deflection in the middle of my rails, not super happy about that. Planning on trying to pull them straight.

Completely forgot to grab the 1" EMT section to add a push up pole for my replacement TV antenna. Hurricane Nicholas took out my old one... They didn't standardize the sizes of these stupid poles. I need to fab some bushing s to fit a 1" into the old DirectTV dish mount...
