When to pick up employee to take to work heard what sounded like a firecracker . about 10 minutes later get a knock on the door and there's all sorts of cops there.since we've been enjoying coffee and donuts I was sure the police were there for the donuts. across the street there's been a hostage situation that has lasted all day and doesn't seem to be ending soonnot allowing anyone to leave. so no coffee no cigarettes no beer. we did move some furniture in front of the window

I'm having a bit of trouble with my dough myself. TBH I think the yeast has changed.
Seems very low activity.
What are you baking your pizzas in?
You could try a starter "sponge" with warm water, yeast, flour and no salt. Once the yeast gets going, a little Lionel Richie might help. Add your salt and the rest of the flour. Salt can mess with your yeast. Your 24 hour cold proof may also be working against you. It is great for gluten production. Chewy thin NY style. For crispy/flakey go quick and dirty. Your sponge will give plenty of levening. I would throw in a little honey to feed the yeast in the sponge for insurance. Take it with a grain of salt. I'm no expert.

Great minds, and all that. Never used to have to do it, but the last two batches of IDY I have bought have needed it.
I go 100ml water, 100g flour, 0.5 tsp Instant Dry yeast.
I try to get the water between 90 and 100F.
I call this mix "Start Ya Bastard", after a popular local brand of engine starting aerosol.

Those are brilliant. I hesitate to use the word "but" in the same sentence as "Ooni", but those ovens are for very fast cooked pizza such as Neapolitan style.

The way to get a really crispy crust is to cook a little slower, say 4 minutes or longer, rather than the 1 to 2 minutes you can achieve with the Ooni.
You will need to slow things down, somehow.

Several years ago, had a new donut shop in town didn't know where it was, so we called the Marine Deputy, Knew him very well he did our boat tops when off the clock, asked him where it was he only asked why we called him :lol:
another time I complained to him about one of his crew, he asked what he looked like, Don't know you all look the same :lol:

Today I picked up another Raspberry Pi microcomputer from Craigslist. Since getting Raspberry Pi’s to monitor the solar and battery on my trailer and learning some Linux code, I have become somewhat of an Rpi addict. So far:

Model of Pi - What I have it doing
Pi 4 - Cellular hotspot for my trailer
Pi 3b+ - Victron Venus OS for solar and battery monitoring
Pi 3a+ - PiHole ad blocker for my house
Pi 3a+ - PiHole ad blocker for my in-laws’ house
Pi 3b - PiHole ad blocker for my parents’ house
Pi 4 - Ubuntu desktop computer for my basement
Pi 3b - Ubuntu server running my website

Wow, this is now 7 pi’s… someone please help!!! :shock:
What cool thing can I potentially do with an 8th? :lol:

Based on the view of the sky through the hole, you picked a good day for it!

I remember how that was, too. Making a 14.5” rectangle in a perfectly good roof. I felt the same for drilling holes for solar panel mounting bolts, too. But butyl tape has kept things dry now for 6 years with no issues.

And how many times did you measure for the placement of that big ass hole?
I remember measuring and measuring for a hole in the back of our travel trailer for an extra little air conditioner..
Drilled a hole on each corner. Kind of a double check thing. :worship:
The first thing my wife says watching the drill bit go through "Well, we're committed now" and then she did this little evil laugh..

Was the same for doing the hole for the fantastic fan in our mini Bruce

Cutting a hole like that in the roof and sides on my cargo trailer was rather stressful. I can imagine it would be greater on an expensive van.
