I wanted to have a bumper but didn't want to bang my legs so I made it so it would drop down, see album.
A removeable tongue is a possibilbity but would probably need to be a single tube (and from what I've heard single tube tongues can be weak and a source of problems) and quite heavy because of the weak spots created by the removeable feature.
I gather that you just want your galley to be adjacent to the rear of your tow vehicle when camping. Why not just back your trailer into its parking spot. If need be you could put a light duty removable tongue on the rear of your trailer for backing it into spaces if it is too heavy to push by hand. As you would be using this tongue for parking only, at slow speeds (I would think, ha), it wouldn't need to be as strong as the one in front used for highway speeds.
Just a couple of thoughts.
