When we built our new kitchen addition 6 years ago, we put in a butcher block counter for our stovetop surround. All I have ever used on the butcher block is mineral oil. Whenever the wood started to look dry, I just rubbed on more oil (don't use veg. oil, it will go rancid) with a rag. It has gotten to the point I only need to do it once a year or so.
