I have done plywood and plywood covered with aluminum. Some people do aluminum by itself but I'm not a fan of that due to low puncture and major ding/dent resistance if you camp where stuff falls out of trees, the wind blows stuff around a lot, or even stuff on the road hitting your trailer.

paint impregnated canvas over 1/4" luan, bent the luan using ratcheting straps, it helped that I built my tear outside during a very wet spring, it made all my lumber nice and flexible. the porch and floor paint finish is nice and tough, didn't even show wear from carrying my kayak on the roof for 1,400 miles.

I used two layers of 1/8" thick Baltic birch plywood. It just falls around the curves. First layer is screwed to the spars, and the second layer is glued over the first, staggering the seams. It has held up well for six years.

The Baltic birch comes in 5X5 sheets 1/8 thick and is easy to curve naturally. That's why using two sheets glued together is very effective. I only used one sheet and then aluminum because I had a layer of insulation under it giving it stability.

I used Marine vinyl over Baltic Birch that had 2 coats of epoxy as a sealer. No insulation.

I used one layer of 1/8" baltic birch fastened on with staples and PL Premium. It has 2 layers of 12 oz fiberglass cloth over it. (Was only supposed to be one layer of fiberglass but I had problems with the first layer so I ended up with 2.)

.040" aluminum sheet over 1/8" luan or baltic birch (grain run side-to-side to make the bends easier) with foam board insulation between the roof beams ... has been my standard for over 25 years and never a problem!
