For 30 years, I've been using the two curved ribs with 4 or 5 cross-beams method ... when fully boxed (sheathing on the inside and the outside), the galley lid is quite strong, stable, and fairly light weight. The only reason I can think of to have more than two ribs is if the trailer is much more than 5' wide (our 7' wide TugDrop will have 4 ribs).
Other's experiences will definitely vary, but, one of the "complaints" I hear most from first-time builders is that they over built it and next time they will build lighter.
