Kristi We have used the 5K window unit for 2 years now in up to 40 deg celcius ( Canada eh) I started out just venting it through the window with a simple plywood adapter to make sure it would work. We keep the roof vent open an inch or so and no issues with humidity etc. It works great and VERY simple. We only bring the unit when we feel we will need it. I later put it throught the wall with a simple marine vent. I added a rv deflector on the inside and can direct the air where needed. We have added handles to the unit and carry it like a cooler. I had trouble posting pics but if you pm me I will send you both the window set up and the current throught the wall...We purchaed the unit at the end of the season for $ 60.00 less that we paid for the fantastic fan.
I have also removed the controls from the unit and mounted them in the trailer extending the wiring with a plug style disconnect, that way we can operate it from the trailer..

Anyone have any luck putting the A/C unit under the counter in the hatch and boxing it in and leaving the bottom of the box (bottom of the trailer) open to vent it? It would fit in my current build but I'm concerned it may get to hot and cycle off because of the lack of cooling. It's nothing to hit 100F here and be 80% humidity at the same time.

That is how I have mine set up. I have only used it once but it did not have any issues. I did put a vent in the side of the trailer to bring in fresh air to pull through the evaporator before exhausting out the bottom of the trailer.

I can use it with the gally closed or open.

Yeah that's why I wanted it that way, closed off to the galley and open on the bottom so I can shut and lock the galley and leave the A/C running for when it's raining or I am away from the teardrop.

Myself and Planovet and Caseydog have AC units in the galley. Planovet and mine are very similar in that you have a hole in the bottom of the trailer just behind the AC unit to dump the exhaust as you described, an isolated outdoor intake on the side of the teardrop for the side vents, and the front of the unit sticking into the cabin through the galley wall. We are in Texas and do not experience any over heating issues. I added an extra pass through vent to allow outside air to enter the cabin forcing the unit to work slightly longer to cool, so it will not short cycle and correctly dehunidify like it should. I also run the unit with the windows open a bit which helps too. The problem is never will it cool enough, it is always that it cools too fast and leaves you with clammy air!

Obviously you would install a screen and rain diverter on the underside:

The flow diverter to keep the hot air moving. This can be removed and a plate put in to cover the floor hole and the back of the AC and then you can utilize the space during winter.

Be sure you do not mount it so low where your covers block the interior intake, mine is only partialy blocked but I had to watch out for it, and Planovet had the same issue and built a "Scoop" to block the covers and allow intake from the top. you can see the extra fresh air vent I added to the left of the AC also:
