I shouldn't have any problems coming in under 700lbs. I'm aiming for less than 650 pounds now.

It's the same design as the one I'm building now. The only difference will be the skin. I want to skin it with high polished aluminum. I'm not sure where to find it, but I've seen a few campers with it, and it looks amazing. I'm sure it's really expensive too.

Highly polished aluminum is hard to keep that way. Ask any Airstream owner.
Steve Frederick suggested stainless. While not as glossy, it's basically maintenenace free.
