If a person was going to use a fabric of on the entire interior would they still need to varnish/poyurathane/or paint the interior wood? I guess what I am asking is the interior varnished to seal the wood or purely asthetic purposes?

...if I were going to do a fabric interior, I WOULD ESPECIALLY SEAL all the wood underneath it, since the fabric will have a tendency to capture and hold moisture........

I have done it with contact cement and sealing it before contact cement. Used a good clear sealer and just one coat just to seal the pores of the wood to keep the wood from soaking up the contact cement.
With carpet I just glue it down and don’t seal the plywood as the glue goes on quite thick.
I would not paint it before the contact cement, if you are using a pores fabric the paint my bleed through to the fabric facing and look blotchy.

If you seal it like madjack says, I don't think you would need to glue the fabric down everywhere if you glue or tack it down on the edges with the fabric taut. That way with time if the fabric gets dirty it would be a lot easier to change out. In some places fabric was/is used like wall paper & was tacked down at top & bottom with trim at edge.
Looked really cool.

Also if you do not glue down the fabric you can change fabric or colors if stained or worn / torn. Use Velco strip to hold in place which makes for easy removal.
