What finished clearances should be used on the exterior doors?

I was thinking 1/8" to 3/16" on the handset side and top and bottom and whatever is necessary on the hinge side (hinge thickness if I use a piano hinge or ~ 1/8" if using torpedo/lift-off hinge.)

The correct answer is whatever looks good.

If you can see the gap from the outside, a smaller gap is better. 1/16 to 3/32.

If you are going to use t molding on the outside, then 1/8" or more is fine.

If memory serves me correctly, this was about 3/32.

That's about what I have on my doors. I used the t-molding method, as it covers up my marginal carpentry skills.

How do you keep the doors water tight? What keeps the water from being forced into the interior while traveling?
