Little Guy - help with the galley construction

I just bought a used 2004 Little Guy 4' teardrop. The galley shelf had been removed and discarded - I was told this is not due to damage but by choice. Everything else is in great condition.
So, any thoughts on recreating it?
Also, what is the construction on the walls?

The walls on my 2006 Little Guy were 3/4 Birch.

Also, I was too tall for my hatch -- kept hitting my head on the hatch catches -- so I moved the lower lift brackets up a few inches and got more headroom.

Nice! Any construction tips on that?
I'm not a woodworker by any means, although I have assistance on this project.

Some thoughts. If the walls are 3/4 inch they'll be thick enough to screw into. If you put down some masking tape or duct tape on the walls to protect them (but leave the area you want to sand uncovered) you could sand down the finish a bit and put some glue under any cleats you use to affix the bulkhead and shelf. That would make it bulletproof.
