What's the skinny on interior skins?

I am about to lap joint my sides together to extend them a bit, so that I can get ready to cut the sides and I got medium quality (AC) 3/4" plywood but then it occurred to me, "Hey why not use something like 3/4" oak plywood?" Sure it's $75 per sheet vs. $45 but wouldn't this enable me to eliminate the step of skinning the insides? If I had a nice smooth oak (or whatever) finish inside, couldn't I just attach the guts (cabinets, etc) directly to the walls and skip the skinning step? Thanks for any advice, it's not too late for me to exchange the three sheets I have for something better. I DO plan to skin the outsides with mahogany but that is a different issue and down the road.

I used engineered flooring for my skin. It was cheap from a surplus or outlet store. Made it simple no mess finishing.

Is oak, maple,etc veneered plywood is made with exterior grade glue?

Having solid walls eliminates the possibility of insulation.

Insulation?

We are laying in our tear in Zion. It's a 5 x 10 -3/4" foam insulation in the walls and an inch in the ceiling. The fantastic fan is cracked open a couple of inches. The temperature is 50f outside and 69f instead. Insulation's a good thing.
