Hull liner (carpet like) applied with contact adhesive is popular with some people (others think it traps odors and moisture).

Here's a youboob vid showing it going on the ceiling of a boat cabin; same technique.

Myself? I would probably go with a soft backed vinyl or fabric instead, and I would make them as panels that could be removed at a later date in case I ever wanted to reupholster (possibly using the chip board/poster board that GPW used on the inside of the Foam Stream as a backer board). I think Bob Henry did the interior of one of his this way by wrapping fabric around insulation board and just pressing it snugly into place.
