Curious what's a fair price for aluminum sheets is and where people typically buy them from?? I am planning on building a smaller 5x8, and I gather you want .032 5x10 sheets. I found a source locally that was asking less than $70 ea., but wasn't sure if that was a good deal or not. Also about how many sheets would one need? Would 3 or 4 do it?

It depends what you want and what you're willing to spend.
What one perceives as a fair price may not be to someone else.
It costs me $166 a sheet plus tax for bright brushed anodized aluminum in 4'x10' sheets.
They call it a high end sign makers aluminum. It's absolutely beautiful stuff.
The price you quoted sounds like a bargain but you need to see if it's rolled up in a coil or flat sheets.
My first build came rolled up by a 500# gorilla and it took a considerable amount of work to remove all the scratches and make it presentable.
This is one of the reasons to buy a better quality aluminum sheet.
