Can i use a sealing epoxy like cpes or west 105 on all my exposed end grains then use canvas and a good exterior paint?

I like the simplicity of canvas and it looks like a good alternative to fiberglassing which i have no experience in.

In a word, "yes". Wash off any amine blush and scuff any hard smooth areas of the epoxy to give it back some tooth, then glue.
