There appears to be 18 to 20 inches of floor before you reach the counter. If that is the case the counter is unreachable. Try placing your coffee table in front of your sink at home this will give you a good idea of the problem. Move your galley wall back to where the counter just meets the rear profile. You will need a bit of clearance for the hatch of course. This will shorten your hatch length cutting down on it's weight as well.
By shifting the door to the rear only slightly you could accomidate a front cabinet or drop down counter.
Just a couple random thoughts.
