Thermapen, the fastest and most accurate probe you can get. Once again it ain't cheap, but all the competition guys (and Alton Brown) use it.

I also use a DigiQ controller for overnight cooks, it has a fan unit that will blow air on the coals when the temp drops. It keeps the temp rock solid throughout the entire cook time. Don't know if they make adapters for your grille, but you can probably ask. The setup has a leave in probe and it will alarm when it is done.

Guru makes a fancier one called the CyberQ wich is to compete with thr Rock's Stoker. They are fancier units with Wi-Fi datalogging and the ability to check your cook from your cell phone.

+1 for the BBQGuru controllers. I've had one for years for my Weber Smoky Mt. and it works great, especially for all night cooks or for cooking during the day when you're at work or off somewhere else.

This is a picture of two Boston Butts ready to be pulled off the CG Akorn and to be wrapped and placed in a (pre-heated) cooler to rest for an hour or so before being "pulled".

+2 on the use of a controller. I use a PID controller made by Auber Instruments. I love the set it and forget aspect of it. Here's a picture of next to my Maverick 732 thermometer. (In the picture, the controller reads 224. That is the actual temperature at the time of the photo. I typically set it for 225 for long cooks. It will hold the temperatures +/- 5 degrees. The 180 degree temperature on the Maverick is the internal temperature of the meat that I was smoking.)
