Watching the pressure cooker---- what fun

Any one else canning these days? Got beans in right now... boring waiting for them to get up to the correct pressure. Then you have to stand guard over them for ten minutes to keep the pressure right! Oh what fun!! :lol: :lol: :lol: :lol: :lol:

Never tried that, have canned venison and turtle and venison soup tho.
Just scorched the tops of three fingers cause I wasn't paying attention, moved the lid across the canner instead of pulling it straight back. They'll be blistered tomorrow!! :cry: :cry:
Think we'll skip the mayo, don't care for it on green beans. :lol: :lol:

I hope you stuck some ice on them real quick like!!!
Steam burns are bad... Got myself real good last time I steam bent some wood... Got one of the biggest blisters I've ever had and I even had gloves on.

Hadda get the jars out so I didn't get it on quick as I shoulda. I'd say at list 2 will be blistered before morning.
Steam burns definitely suck, mostly because they happen so fast, only a split second and it's too late.

Rich....my favorite was "Doug and Daizy's bitchen bred and butterz pickles" they were good enough that the ex wife bought a case 24 pints, of them to give out at Christmas....only done pickles, salsa, and corn relish...but it's a good time...got some goodies in the garden to put up? Doug

I've heard of using a pressure cooker to can, but they scare the crap outta me, I remember my mom's pressure cooker lid hitting the kitchen ceiling like a scud missle when I was a kid. We can tomato's peaches and sweet pickles, some jellies too. We use the big grill and kettles , This sucker has 3 30k btu burners, after the "grill box" is removed that boils water in a flash

I'll probly have about 40 quarts of green beans, most likely 30-40 qts of quatered tomatoes (wife eats 'em outta the jar all winter, yuk) hopefully 20+ qts of my own special salsa (simple recipe but very tasty) I do hot garlic dill pickles, I was hoping for lots but it's not looking good, pickle bushes kinda petered out early. We'll blanche and freeze the cauliflower and broccoli, should have lots of that. Maybe freeze some corn if I get enough, need rain.
Gotta pick beans and maters this morning sometime.
