I have done this in both directions. My previous tow vehicle was a Jeep and had a 7-pin connector. The trailer came with flat four so I modified the trailer with 7-pin receptacle, mostly because I wanted to add a trailer battery and charge it from the tow vehicle. Otherwise an adapter can connect the two.

Then I got a new tow vehicle and with tow package it was prewired only with four wires. This time I had the hitch put on after market and my hitch installer did the additional wiring for 7-pin connector, battery charge wire and trailer electric brake controller.

Anyway, my suggestion is to go right to 7-pin connector to the trailer. The connections do not all have to be wired right away. But it leaves open the possibility for trailer battery charging and electric trailer brakes. The center pin on the connector is usually called Aux. It can be used for trailer backup light if desired. For now that position is unused on my trailer.
