I will be instalingl this in my 6x14 Cargo Conversion and can accomidate either in the space. Is the 8700 series easier to wire? does the 8900 series require anything extra?

The 8735 & 8745 have AC & DC distribution (which is desirable).
The 8935 & more power versions have AC & DC distribution also.
Both have 3 stage charging.
I have installed two 8900 series WFCO converters (8945 & 8955) in van conversions. I , also, had one that came with a trailer. They worked very well. I liked the integrated AC & DC distribution. I used the 8900 series for charging D4 size batteries (200 amp/hr). Wiring is very easy. It should be the same for 8735, 8745, & 8900 series converters.
The size battery that you use should determine the converter size that you install. If you will install a big battery, get a powerful converter.
If you get a large (output amps) converter it will charge the battery faster.
