While building custom minibarns I was asked to build one for a tiny horse. One request was for a dutch door. It was really far simpler than I had figured. I built my standard door of
t-111 and 1x4 halo edge and simply split it in the middle removing 2 1/4 inches. I laid a 2x6 flat and fastened it to the bottom section and a 1x2 under the top section as a rub board slightly tapering this board to make closing easier. I think it could be easily done even with a pre made door with a little ingenuity.

that is not quite a Dutch door it has a hinge halfway up that lets him bring it back and down when he drops his hatch. I guess it is a kind of dutch door and could be dropped to let air in if he wanted.
