Thanks! I think I am going to redraw it with 2" walls and 1.5" of insulation. The headroom at the highest point is 6'3" but at the door it is only 5'7" or 5'8" so the door will need to be a shot door. I am looking to use torsion axels with larger tires and run a bash plate where the tanks will be. The plan is to insulate everything so it can be used in the winter. I might also bring it down to 7' wide, that will allow for a 80" bed length with 2" walls.

So polyester resin wont eat foam? I was going to use West Systems epoxy because it works on making boats waterproof. Will that eat foam?
Do I really need plywood sheeting? Can I just use 2" foam to fill the voids in a plywood frame and then glass both sides? Or does the sheeting really provide lots of additional strength and durability? Does foam core plywood sheeting make the build easuer?

No glass foam can be stronger than wood
there so many Bullshit Liars I read the lie on the web and I've never done it but now I'm an expert so I will post about it.
IF it will soak up water wood paper use epoxy . just need to use the right type of foam to go with whatever resin you're using.
Ignorant people tell you to paint it with a bunch of layers of paint what a waste of time. The paint will stop direct bonding to the foam
most Glass/foam trailers or some of their parts. extremely weak in beginning but when put together unbelievably strong

Polyester resins will quickly dissolve most foams. Saywhatthat has a foam that it doesn't dissolve. I don't know what it is.

Epoxy resins will not dissolve any foam board. It's commonly used in the aircraft industry directly over foam.

I don't think polyester resins and catalyst will affect polyisocyanurate rigid foam.

polyester resins and catalyst will not affect polyisocyanurate rigid foam . That you can get from home depo
In a way it would be nice if it affected it you wouldn't have to do so much work.
What we found that makes the strongest panel is you got to drill angle hole that way it locks it in .THEN let resin drizz down the hole .On a 4 to 6'' . grid
You don't have to fill the holes in That way you can lock the two skin together. Makes the density of the foam doesn't mean s***.
you have all these tubes on a 4 to 6'' grid
look at a parking garage all those little pillars same thought process

Countless times I have said you are building an aircraft not a tank.

Is that the layering layup you used in your build?
