We have acquired a 15 year old 5x10 squaredrop trailer that needs to be redone. Plan is to make it 5x12, with a galley, some internal storage for camping gear and fiberglass over 1/2" plywood, 2" insulation, then a nice 1/8" hickory interior. Current trailer is 1600# and hoping to get it down to 1300#. Teardown begins June 1 and hoping to have it capable by early October for the eclipse in Monument Valley.

3/4" of insulation in the walls and 2" in the roof is plenty.

Make sure the forward bulkhead is tall enough so you can sit up and not bump your head.

Depending on how you build your walls, 1/2" ply is overkill. Shaving 300# while making it 2' longer is going to require saving weight everywhere you can.

1/4" ply, 3/4 foam, 1/8" ply interior with minimal framing is plenty if you do a good job laminating the wall components together.
