Swapping out latch

I could be wrong on this, but my impression is that the existing latch has no mechanism for being released from the inside of the trailer. Therefore it can not be left in place. Myself, I would be wary of any DIY makeshift interior releases. Proper RV latches have insude releases and inside operable deadbolts that can also be operated from the outside with a key. Simple system, once you install the new latch.

I've thinking the same as you. The existing latch must go so that no one is trapped inside! I thought I was missing something in the conversations.

I didn't realize the current door latch doesn't open from the inside. Not good.

If your RV door latch doesn't fit in the current latch area, you can use some nice polished alum or stainless steel to do an "entry panel" that will hide any cut differences. Just be sure to seal it all well.
