Great start! Looks like much of my list. Amazon seems to be doing well.

Curious is you are going to use your camper for catering also, or if it is just the catering style with the side panel?

Yes, it won't a be food truck per se, but we're p/t caterers so we want to maintain some catering functionality. Basically we'll have to keep the inside spartan, a murphy bed of some sort aft. inside the V a countertop with a single NSF handwashing sink. Under the sink we need minimum 30 gallons h20. 45 gallons of gray water but we do that with portable rolling tanks under the trailer. 12v water pump and battery also under sink. Propane flash heater on shark fittings will clip to the exterior as needed. Then we have a nsf 3 compartment sink on wheels that can roll into the trailer when needed at events. shark fittings for that too. Food cart on wheels rolled onboard as needed. So there's a bit of modular things going here. Biggest issue is the vending window. Do not want the traditional concession style, they're expensive and inconvenient for everything EXCEPT catering. Ice chests on wheels. We got a ramp trailer of course. cargo doors wouldn't be good. Still not sure about windows. biggest stumbling block. Probably a misnomer to say "hybrid" since it'll either be in one mode or the other, never a mix.

Modular should work.

Would two or three drop down windows next to each other work? I have seen some pretty good sized ones on some fancy horse trailers. I don't know what sizes they come in though. Looked like about 24 wide by 20 tall.

Or maybe some rv exit windows.

I going to see if two 30x15 windows mounted vertically would work.

Anyone got a recommendation for a good caster trailer wheel? I ordered this and it's pure junk. I'm on a slight incline and need something decent.
