Hello Again! Bought a 7x16 for simple camping.

Hello Cargo Trailer folks-
So one and a half years ago I came on here, all revved up to buy a trailer. Then the "Family" vote was to get a jeep instead.
A couple of months ago, traded in the jeep and truck. Three days ago bought a 2004 Haulmark 7x16 flat front. Pleasantly surprised to find it's 6'6" tall inside.
Here's why I'm camping:

As you might expect, I've more questions than I can count.

The trailer is for one or two night camping, 4 people, in Florida (Temps up to 97f. No heaters will be used.) It'll also be hauling this:

I'm aiming for super simple.
-3 2x4's in wall truss supports and plywood top to create a sleeping platform and then air mattresses on it and floor below for sleeping. Stack wood on the floor when in transit with UTV.
-AC of some type to deal with Florida heat. Either dual-hose freestanding ducted through floor or mini-split with condensor on tongue and hoses through floor. No wall cuts.
-Microwave and fridge up front.

In order of what I need to deal with:
1. Flooring. It's plywood with plenty of oil/grease stains and very mild odor. Wife has the nose of a hound dog. Any specific paint-on surface I can directly apply to floor to seal up, or do I have to replace?

2. Electrical: I'm gonna have an electrical outlet box on tongue for connecting shore power, then supply line under trailer, up through floor in front to power lights and fridge/microwave.

3. Insulation: This is the biggie. Spray on closed cell or Home Depot sheets of something? For hot Florida sun. Does insulating the walls really help much? I was thinking about just doing the ceiling.

4. Finishing the ceiling: With either insulation option, how to cover it up? Stringers attached to metal roof bows and then luan to stringers? or Luan straight to roof bows? What specific hardware when attaching to roof bows?

Thanks to anyone who's got some thoughts.

Regards,
steve

You might be able to seal up that floor, but the question is, will the oil and grease keep the stuff from sticking? Would hate to see you apply an epoxy finish only to find it peeling up in a month. You could maybe flip the plywood over?

Yes, the insulation helps a ton. I used the white "R-tech" foam sheets with the mylar on one side. Or the pink stuff is good too, whatever HD has in stock. Get the thickest you can that will still set flush with the wall studs.

If you are going to use insulation thicker than the roof bows, then you will need to apply some kind of spacer, wood or otherwise. This will help prevent a lot of the "thermal bridging" that happens when interior sheathing is applied direct to metal.

The best thing for sealing a floor like that is the original Kilz primer. You have to use the original oil based as the latex formula doesn't get rid of the smell. It's extremely stinky and a pain to clean up after, but once a couple coats dry you can put whatever you want over it and be good to go - obviously clean the floor good first before applying. Good luck and enjoy your new to you trailer!
