Corn Meal Waffles

After getting my antique waffle iron I remembered my Mom making waffles with Jiffy corn bread mix. The recipe is right on the box. They are not only good for breakfast, but with a healthy size ladle of thick chile on top, good for lunch or dinner too.
Has anyone else ever tried this?

I've never made waffles from Jiffy corn bread mix...but I have made pancakes, and yes...chili is a favorite topping to make them not-a-breakfast. They're also pretty great with leftover roast turkey and gravy...a post-holiday dinner improvisation that has remained a favorite for several years.

Never tried that one, but it sounds good. The chili can be eaten without a bowl if the waffle holds it together. :thinking:

Jiffy Corn Bread mix Waffles

1 box Jiffy Corn Bread mix
1 egg
2 tablespoon of oil
¾ cup - ½ and ½ or whole milk

Mix this together and bake on hot waffle iron for about six minutes. Lift the
lid just a little and check doneness ~ move to rack and let cool.


Serve with your topping of choice…we like to brown some ground beef with
onion (1/2 cup) in a dash of roasted garlic oil with taco seasoning added to
taste let cook for 5 minutes or so…..add a can of re-tell (I use extra hot,
pick your heat) and a can of ranch style beans. Let that all simmer for 5
minutes.

Spoon this over the waffle and top with shredded cheddar cheese and top
with sour cream and sliced green onions….

Go here...... http://www.jiffymix.com/request.html and get a great little recipe book that has all kinds of quick and easy recipes using Jiffy Mixes for your waffle irons and especially your Dutch ovens.

I am a moderator on a forum in Nebraska on the Camping, Cooking, and Recipe section. I have suggested this little cookbook to budding Dutch oven cooks and it is proving to be very popular with everyone. Give it a try. It's free and has some good ideas in it. The Chicken and Biscuit recipe is very good, quick, and easy. :thumbsup:

going to try Jiffy mix Saturday morning. With my syrup they have to be good!

Tom, when you get that Jiffy Mix cookbook, be sure and report back on what you think of it. That chicken and biscuit recipe that I suggested is very good and tastes just like a chicken pot pie. Good comfort food for a chilly evening around the campfire.

There's a bunch of very good recipes and ideas that work in Dutch ovens in that little cookbook and it's the perfect size for a teardrop galley, as are the Jiffy Mixes, themselves :)

They were OK. Not our favorite but of course we thought the syrup was wonderful. I am going to try a recipe where I make the waffle mix from scratch. looking for that perfect waffle.
