I Finally Scored A Chicken Fryer!!!...

Not... A dutch oven works just fine. 8)

Did a test run today using my 16"er for Humboldt County Fried Chicken.

Soaked the thighs for an hour...

Coated 'em...

Browned 'em...

Removed 'em and inserted my cast iron grill for my 14"er, using it as a trivet.

Put the thighs back in...

Baked 'em for one hour...

Trivet did its job...

This was a test run for next weekend's FDOS campout.
I'll be making a couple of adjustments, tweaking things just a tad.
I'll attempt to do a video of it then...

Eunice... Wanna do mashed potatoes to go with it???
I had to toss a great base for gravy out because I used all my flour for the coating. Kev's gonna do bisquits to go with the chicken too.

Sorry Doug I do not care for blue cheese but will do my own seasoned potatoes (that Kenny loves) plus plain for folks who prefer them.

At that time of the night I get out the BISQUICK and make some really quick "drop biscuits", those right out of oven with real butter..... The are also good foundation for strawberry shortcake...

I just got word that the FDOS campout at Staffoed RV Park isn't happening, but we will be having the Saturday DOG at our normal meeting place at Rohner Park in Fortuna with eat time scheduled for 2:00pm.
Joanie was told several of the club member will be going to a funeral sometime this weekend, so that's why the campout got scrubbed.

Hey hey I am the first one home from the FDOS DOG. Kenny was sick so I cooked the mashed potatoes at home and then went down to the park to eat. I came home early to check on Kenny
Everyone is going to want Deans chicken recipe! It was awesome. He was running late and was considering a pass on the gravy but not after I told him I had just peeled 5 pounds of potatoes! :D

There was a lot great food.

Awww... I wasn't running late, just wasn't feeling 100%.
After being bed ridden with the flu this week, I somehow managed to get my carcass out of bed and down to Fortuna yesterday for the FDOS DOG at Rohner Park.
Still looking a bit peeked, I did manage to get the video put together, with the help of my son.
I made a couple of adjustments to last week's trial run and the results were just awesome... I think it's going to be hard to improve upon this recipe.
Topped off with Eunice's mashed potatoes and Kevin's biscuits... It disapeared in short order.
