It ain't fried but I will give ya a great one for baked........
Boneless skinless chicken breast split down the middle and butterflyed.
Mix a box of any brand stuffing with a small can of chicken noodle soup. Mix should now make a ball in your fist if it crumbles add a VERY small amount of water.
Stuff the cavity between the breast halves and fold back and secure with a tooth pick
Bake at 350 ( that's 24 coals in a 12" D.O.) for 45+ minutes. Pull them gently out of the D.O. and lay them on a grill over the fire for a couple minutes a side to grill mark and pretty them up just before serving.
I did these in foil on my smokey Joe Jr. grill and they are just out of the foil still needing a crisping up.

If you have your propane torch ( campfire starter ) with ya you can carefully and lightly toast the stuffing with it.
