Minimal update today: 6 boards cut, drilled, and mounted. 4 boards part of the bulkhead wall and 2 roof spars. Good, tight, strong joinery depends on consistently accurate dimensions and cuts and these six boards took a few hours. I measure and cut a little long and then "sneak up on" the final length little-by-little using my bench sander (learned that from KCStudly here). The pockethole joints require pretty extensive clampage to get them to come out right. The screws go in at an angle and it wants to pull the board off of alignment. You must clamp the boards from moving in any possible direction, very securely, before screwing them together. I use 3 or 4 clamps and 3 or 4 little 2x2 boards to "block-off" the boards from moving.

Here's a sneak-peek of the possible movable galley. From a more traditional layout across the back of the camper:

To a side&side layout that allows for a "kitchen door" to the cabin area:

Things are moving quick, for now. Thanks for looking.
