Buckeye do over please give me some advice and knowledge

I started with another build (weekender) and things were going fair but then I spoted the moby 1 benroy. I knew that was really what I wanted so I've set the weekender to the side for now and work on it as I feel the need. I really want my copy of the moby to come out a tip top finished project!! So I bought some more ply and made a pattern and started to do the layout for the galley and so on but I have so many ?? On how and what material to use. I bought some 3/4" acx ply and cut it out to the pattern piece I had cut and sanded. And then I started second guessing my choice of material since all ply that everyone uses is Baltic birch. Is acx ply not a good choice? I've looked at the hardwood plays at the big box stores and its junk!!super thin veneers, mdf cores, and already starting to delaminate. I'm trying to find a cabinet shop local but haven't got that far yet I've been to busy with work. Also the glue that is spoken of "pl" what is it I've read more in the past 2 weeks than I have in the past year trying to find someone who says what it is. On the weekender I've been using tite bond insta grab construction adhesive I hope it's alright!! Well that's it for tonight I need some rest!

The best choice in plywood is marine grade, period no ifs. It is expensive but the value in longevity is there. A supplier in Ohio (an assumption due to title) http://marine-plywood.us/ the other possibility don't use plywood. Walls on our trailer are an external skin of Filon with a Luan backing about 1/8" thick and a wall board with Luan with a vynal backing also about 1/8" thickness. The frame is 1X1.5 X 0.06 tube and Styrofoam in between.
