Hummm – wonder what’s cooking? After reading about root beer cobbler – I decided to give it a try – and also a recipe for tamale pie. Gathered the necessary ingredients
Whitey's Tamale Pie
1/4 cup oil
2 lbs lean Ground beef
2 cups chopped onions
1 green bell pepper chopped
1 serrano pepper minced
8 oz tomatoe sauce
1 8oz can corn
1/4 cup chili powder
1 1/2 tspn salt
1 tbspn ground cumin
1 tbspn garlic powder
1 tbspn dried Mexican Oregano
2 packages Jiffy or pioneer corn bread mix (Unless You are Jeepdad)
1 small can of sliced olives
1/2 tspn of cayenne
Get the meat browned and drained.
Get the onions,pepper and chili going for 3-5 minutes,add the tomatoe sauce,corn,chili powder,salt,cumin,garlic and oregano.Let roll for about 10 minutes..
Make Your cornbread mixed up You can put half the mix in the bottom and then spoon the meat mixture over it and finish by putting the rest of the C.B mixture over the meat..Then put the olives and the cayenne on top
I like to just put all the C.B mix right on top..The key of course is not to place to much heat on the lid..Run like 5-6 under and 10-12 on top..Just dont open the D.O to offten,but take a look after 10-15 minutes to makes sure You dont have to much heat on top
It has a pretty good zip to it,But it is real good beer drinking kind of zip..Enjoy
