Cracker Barrel Country Store Hash Brown Casserole (copycat)

Cracker Barrel Old Country Store Hash Brown Casserole (copycat recipe)
This would be a good DO recipe for a Gathering potluck!
Serving Size: 12
Ingredients:
1 2 lb. pkg. frozen Hash Browns
16 oz. Sour cream
1 can cream of chicken soup
1 stick butter
1/2 C. Chopped onion
2 C. grated sharp Cheddar Cheese
Preparation:
Melt butter and set aside to cool down.
Place potatoes in a greased 10x14 inch dish. (or adapt to DO, I don't have a camp DO so cannot do it for you)
Season hash browns with salt and pepper. (and anything else you want)
In a bowl gently combine minced onions, sour cream, and cream of chicken soup. Stir in cooled but still melted butter. Mix these items together.
Pour soup mixture over potatoes; sprinkle with Cheddar Cheese.
Bake at 350 degrees for 45 minutes, or until all is completely warm, and the cheese begins to melt.
Variation: Substitute 1 cup PepperJack Cheese for 1 cup cheddar
Add chopped chili peppers or bell peppers.
REALLY good for this type of recipe. People who have eaten it at CrackerBarrel say it's the same.
