Those are the two actual builds that I am familiar with, although I'm sure there has been talk elsewhere (probably in the big Thrifty thread).

You may wish to look google search on "foam strip planked boat building". Epoxy Works has a 3 page writeup on a Class A catamaran built using the technique. I could see using it to make a canoe and other types of small boats. Areas of foam blocking could be included to make it totally unsinkable when fully loaded.

Don't forget the paddle boards. They were built with fishing in mind.

Cowboy , the only reason to come here is if you want a boat that doesn’t cost a lot of Money !!! Let us know what you need and we’ll help design it for you ....
WARNING : Be prepared to NOT spend a lot ...to get an unsinkable boat ...

Built a foamy/ luan hybrid sailboat last summer. Been sailing her one to two days a week. Sails great. The boat is designed to be sailed, rowed, or will accept a small motor. I have an electric trolling motor and battery but haven't used it on this boat. The plans are free on the internet..called a puddleduck racer. Lots of you tube videos.
The plywood was wrapped in a canvas drop cloth and attached with Titebond III. It has held up great. Could not be more pleased. The foam portion is laminated foamboard 3/4" thick two layers attached to the interior side of the plywood. No signs of wear on the canvas. The paint (porch paint) has held up great.
If I had the room, I would reconsider my initial concerns and construct a new boat entirely out of foam/canvas and eliminate the luan plywood. Could eliminate about 36 lbs. of weight making it easier to transport.
Need to sign off, weather is beautiful in central Florida and going sailing this afternoon.

I really do like this idea !!! Could be made bigger to better suit the owner! Easy to take something “Dirt Simple” and complicate it... we’re Good at that !!!

Here’s a simple Pontoon ... you need TWO !!! (schmaybe’ Three ? ) Big blocks of foam are available ... make the pontoon the size of the blocks you find , or just glue more foam on .. A “spine" may be nice if you’re gluing up smaller blocks ... and naturally some “hard points" will be needed for attaching everything together ... I’m sure there are many and varying opinions on all that ...
For more durability (and Cool looks ) , you “could” cover the foam with a fabric and paint it

Pontoon with wooden spine and attachment "hard points” .... Just an idea ... crumbs for thought /discussion ..

Might have to make some outriggers for my canoe. Would make it easier to fish from.

Lash enough pool noodles together and you’d have a regular “ Foam Tiki " ....
