Black bean salsa recipe

All,

I had requests for this recipe after bringing it to the Loyd Park Christmas party. Here it is:

1 can of Goya * black beans, rinsed ** and drained
1 can of white shoepeg corn ***, drained
1 1/4 cup of chopped fresh tomatos
1 1/4 cup of diced onion
3 to 5 diced fresh jalapenos
1 can (4.25 oz) chopped black olives
a handful of chopped fresh cilantro
Juice of one fresh lime

Chop and combine items, toss gently to mix. Serve with Fritos or Tostitos Scoops.

* I've tried various company's canned black beans and I think Goya's have the best taste, texture, etc.
** The beans are packed in a thick juice. I noticed that if this is not rinsed off, the salsa will spoil in a few days.
*** The Green Giant brand seems to be the one readily found in stores.
