This is the only pic I have at the present time...but the Coleman stove is attached with a pantry underneath it full of pots and pans. Also behind the stove is a storage compartment for large cooking utensils. The cooler also slides out. I've done this type of arrangement on all my tears and it's worked really well for me and the others that have bought them. It gets the stove out so that you are closer to the burners on it and helps to keep the cooking crud out of the galley. Make sure you get it at a good working height, close to a typical stove type height. I used the 100# sliders from HD on the stove and cooler sliders. Doug

I did slide out sections in my galley. Then slides are 28" full extension 100# rated units. I have a 92 Ah gelcell UPS battery tucked in behind the microwave. No water storage yet. I'm considering adding this with a "tank" made of 4" pvc pipe slung below the floor.

I also have a 9 gal water tank under the floor behind the axle with a elec water pump. The sink drains into that blue tank under the rear end.

Counter flips up to hold the shelf goods in place and latches like a pantry door. Both counters swing in just like you are folding up a pocket knife.
I bungi cord the stove in place while in transit. When packed up ready for the road the redneck water heater sits on the right side cutting board next to the sink and the little toaster oven is tucked behind the faucet partially in the sink. What will not fit in the swing out cabinet storage under their counters has to go inside or in the tow vehicle.

I think the most practical way to add space for you, would be the addition of 2 side tables. One to cook on and one as a clean up station.
This would get your stove away from the hatch and give you a lot more elbow room.

A wash and rinse sink and a dish drainer would be simple .

I stole these pics out of Becca's album. They are great examples of what I am talking about!
