Great start!
Are you in FIRST? I'm an old school Battlebots guy that still helps out there. We just finished the San Diego comp. The robots sure get you out in the garage don't they?

that is quite a bit to bite off for the first build.
the 2 propain tanks seem serious overkill unless you are planning on extended stays on the road/off the grid. (most here use 1 lb bottles for cooking, light, etc. 1 bottle will last a weekend for most)
they also seem they would be creating a heavy tongue weight combined with the water tank. Then as you use the water you end up with the water weight aft of the axle in the galley, not impossible to deal with, but a too heavy tongue turning into a too light tongue can really mess with your packing. Most builders try to keep the fresh and grey tanks as close to the the axle as possible (even right over it) to minimize changes to balance.
What is the plan for the space going across just behind the axle? a room for kid(s)/ closet?
I can't recommend enough having two doors on a tear, unless it will be just one person all the time.

The reason for having 2 Tanks, 1 for the Big Buddy heater I have it uses lots of propane, also my stove is a stove from an older RV and if I use the oven it also uses lots of propane.

The space in front of the galley will most likely be the Grey water tank and storage for the fold up camp chairs and clothes. Wiring junction and the converter.

I don't have enough room right over the axle for the fresh tank or I would.

Here is my update I got the passenger wall done then realized I forgot to cut out the door. So I will cut it out then frame it. I also got this propane tank at homedepot for $20 what a steal.
