Pierogi Casserole

You will have to adjust this to your cooking method for Dutch Oven. I don't even have a camp one, just enameled DO.

This is for when even Mac&Cheese isn't comforting enough! Potatoes and cheese and butter and pasta. That's enough carbs and dairy to heal about anything!!!! :lol:

Pierogi Casserole

Serves : 6-8
Prep. Time : 1:00

10 med. potatoes - boiled
10 oz. grated cheddar cheese
8 oz cream cheese - softened
1 cup real butter
4 med. onions - minced
salt and pepper - to taste
1 Lb. lasagna noodles - cooked, drained

-Beat together potatoes, cheddar, and cream cheese until cheese is melted and no potato lumps remain.
-Saute onions in butter until soft.
-Stir 1/3 of the onions into the potato mixture; salt and pepper to taste.
-Place a layer of lasagna noodles in the bottom of a greased 9" X 13" X 2" pan.
-Spread 1/3 of the potato mixture over the noodles.
-Repeat layers, ending with noodles.
-Pour remaining onions over all.
-Bake, covered, in a 350 degree oven until heated through, about 30 minutes

You might want to sprinkle shredded cheese over the top. ;)

I've been thinking that for a DO it might be good to use the jumbo pasta shells. About 4" long. Make a casserole that has most all of the potatoes in the shells. Haven't decided on what to have in the base. Flavored bechamel or something.

There must be lots of others here who have to read 5 or more recipes to come up with your own take! :D

Wow.. looking at the ingredients... this is one recipe that will send your blood pressure over the top..... My advice.... do not eat..just apply directly to the hips...... :lol:

I will have to copy this one down. I need to make a DO recipe binder( paper copy ); I already started a CD for the laptop thumbdrive. I need to make a DO thumbdrive with pictures. :thinking: :twisted: :thumbsup:

This is NOT for everyday! :) It's major comfort food. :lol:
