Size does matter...for 'fridges

For years I've been using a 48 qt. Coleman and/or a Gott 80 qt cooler with ice packs for camping. Now that I'm building the ToyBox into a camper its time to get a real fridge.

What size fridges work for two people?
Would you give up a freezer or not?
LP/120 or is the 12v needed since I'll have battery on board?
Does adding insulation sheeting to the outside of the fridge make a difference?
