While I do not use Apple, my wife does. Bejeweled 2 (an addictive time suck), Found HD and Bon Voyage (remember the search games in the Highlights for Children?), of course the Kindle app, Google maps (the apple version is, shall we say "under negative outlet pressure"..) There are note taking programs which will take your finger-written notes and convert them to text, then let you add drawings on the same page- I use an android version for brain storming, or in my case, synapse sprinkles.
Swifter if you want to look at sites that use flash.
It really depends on what direction you would like to go, and whether or not your ipad is wifi only or hooks into the cell phone system.
i have an app from RIDGID on my tablet which turns the whole thing into a 3-axis bubble level which also lets you line things up using the camera.
