Used the plastic hinge from Vintage Tech.Put aluminum 1/8" x 1" flat stock on top of hinge with screws about 2- 1/2 inches apart across to keep hinge flat. This worked good and never leaked.

I think the plastic ones you guys are using are very different than the centaflex one - The "plastic piano hinge" one from vintage technologies doesn't look great to me since it's got that tiny strip of plastic that is the hinging point. This centaflex hinge looks like this:

The hinging part seems thicker, and the overall construction of this seems much more rigid. I reached out to the guy on the channel that I found this on and he said after 3 years it's still holding up with zero issues. I will, however, try and build the door to be a bit lighter than my original plan, and make sure the gas struts are holding a lot of the weight, even in closed position. I would much rather have to replace a strut than the hinge, despite the cost. If this lasts for a LONG time and can keep the water out, I'd call it a win for sure.

I'm still drawing out my galley hatch (squaredrop, not curved) and will be posting it as soon as I finish so you guys can give your thoughts on it :)

I hope it works and I'll be anxious to see your hatch.

That does appear to be a much better design than the one I used.
