I think that the wine & cheese is agood idea, but maybe as you suggest, better for Friday evening. When we were wintering in Florida, we had a wine & cheese party once a month, and they were a huge success. There is no need to limit the menu to wine & cheese: any beverage will do(with the focus on wine) and for food don't feel limited to cheese. We would have all kinds of "finger food", meatballs, sandwiches, veggies, as well as many kinds of cheese
