My camping spice collection is salt and pepper, soy sauce, ginger,sesame seeds, oregano, cumin, basil, garlic powder, onion powder, chili powder, sugar, cinnamon and vanilla extract. I also travel with Cholula hot sauce and Sriracha hot sauce and sake. With that collection I can cover Italian, Mexican and Asian dishes and most American dishes and some desserts.
I never was any good at traveling light! :lol: :? :o

I could use a spice rack. Right now they're just thrown in a plastic bin. Thanks for the idea!

My little ferris wheel shelf in the chuck wagon takes up no galley wall or drawer space and is right there at nose level so they are easy to read and easy to grab.
Growing older but not up !

My little 2" deep cabinet on the barn holds all the spices I could want as well as small canisters of flour sugar coffee etc.

You might notice the McDonald milk chubs make great spice bottles and the large and small frosting containers make great mini canisters.

The 4x7 has no galley and I rely on the batwing tabls for my "kitchen"

I may toy with a shallow drawer under the side table for spice storage
perhaps a shallow steralite plastic storage unit so it could be removed and a lid snapped on for transport.

I think If I were building a galley with lower cabinets one of these would be a great add-on.....

Still looking for the perfect containers, but for now, these are the dry spices and blends I always carry on the road:
- sea salt (in a grinder)
- black pepper (in a grinder)
- Dinosaur BBQ Cajun Foreplay, a dry spice/rub
- adobo sin pimento, a salt/garlic/cumin/turmeric blend without pepper
- dried Italian herb blend (basil, oregano, parsley, pepper)
- curry powder
- granulated garlic powder
- cumin
- cinnamon

I add other things depending on what I'm making. But since it gets really hot during traveling weather, I don't carry large quantities of anything except the sea salt and peppercorns. Dry spices, blends and herbs can't take being stored in the heat and loose their flavor during a summer riding around in the kitchen backpack.

I do have a small collection of leakproof bottles in which I carry:
- worchestershire sauce
- tamari soy sauce
- balsamic vinegar

and of course - dijon mustard, ketchup, butter, olive oil, maybe mayo

If I'm doing a lot of cooking for other people, I'll make sure that I have at least one other kind of vinegar (red wine or apple cider), fresh herbs, and a couple of lemons or limes (or both.)
