The cheap option won't work as I can't find a box. The top option works better as I can simply drill a hole and slide it in. I have a roll of butyl tape. I will add plastic box cover on the back as a rust-proof spacer to give a little more room in the plastic box.

Abq to Oklahoma City. Averaged 11.5 mpg towing trailer and about 1000 pounds.

My observations from 2500 miles of driving so far:

Queen bed will take up too much space in a 6x12. It seems ok on paper. Twin mattress and a fold-out bunk makes more sense for my liking

Counter space. Can't have enough when stopped.

Shower would be nice. Maybe a pan and place the Thetford inside when traveling.

Heat. Must have heat. The noise from a squirrel cage would be preferable to cold.
Saw a guy running a Honda EU mounted in the back of his truck under a slick bed cover made from aluminum channel and FRP. Keeps the noise down and the generator protected. This guy does network maintenance and lives out of his trailer / workshop. A 7x16. Roof mounted AC unit, a couple of windows. He hadn't heard of this site but had a nice conversion. He stays at Walmarts and truck stops unless he's in the boonies. He heats with electric only.

His other big tip was leveling jacks. He has four, and uses his drill to level the trailer in a couple of minutes. He said there was nothing worse than sleeping even a little off level.

Water: I used five gallons since Tuesday. Finding water on the road seems to be pretty easy.

If money wasn't an issue and I had a little more room I think this would be the perfect solution -

Just mount it under the floor and put some sound deadening material around it.

I haven't installed my complete solar system yet, but when I prewired mine I just used a small breaker box and breakers designed as an ac disconnect for a house. Plenty big enough without taking too much space and readily available at Home Depot and Lowes. I do like Blue Seas stuff though and used one of their panels for all my low voltage circuits - top quality.

What's the difference between using one of these indoors with a window cracked and a basic Coleman propane stove with the window cracked?

Both burn oxygen.

I've read the manual for the Atwood stoves and they have a CO warning.

For limited cooking with adequate venting is there really a difference?

Unless you recess the fixed cook tops and have a cover for it then you'll loose some counter top space.
With the Coleman style you clean it off, fold it up and put it away till the next time you need it.
Both burn propane and create nasty gas that will do you harm... so in that respect they are the same.
